Chia Seed Pudding with Coconut & Almond Milk

INGREDIENTS:


1. chia seeds

2. coconut milk {thick is best}

3. almond milk {watery}

4. xylitol or honey

5. vanilla extract {optional}


METHOD:


1. Mix half a cup of chia seeds with half a cup of coconut milk in a bowl

2. Add another half of almond milk to the mix

3. add xylitol / honey

4. pour the mix into cups and put into fridge overnight or for minimum of 5 hours.

5. take out of fridge and enjoy (you can also serve with fruits, compote and coconut shavings
